Found a Yummy Recipe

So I found a yummy appetizer to you to give a try. Super easy and super tasty. I found the recipe on another website, but was unable to link back to it to give then credit. :(  Anyway. give them a try and maybe now that summer is here I will have some time to actually get this blog off and running!!

Jalapeno Poppers

INGREDIENTS
1 (8 ounce) can Pillsbury crescent rolls
6-8 ounces cream cheese, softened
4 jalapenos, seeded and diced finely
8 pieces of bacon, cooked and crumbled



DIRECTIONS
1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper or spray it with cooking spray.
2. Open can of crescent rolls and separate each roll along the perforation. Cut each triangle in half.
3. Place 1-2 teaspoons of cream cheese on each roll and top with a teaspoon of diced jalapeno and a teaspoon of crumbled bacon.
4. Gather the edges of the dough up and pinch them together making sure all the filling is sealed inside. Place the ball of dough seam side down and bake for 11-14 minutes or until golden brown.

Natty Bug's First Cupcakes

Natty Bug (3 ½ yo) and I made cupcakes today. This was her very first time baking and she loved it. She is allergic to egg and has always refused to even try to eat cake. Yes, even when she was extremely young. Today she made the declaration that she loves cupcakes. So being the Grammy that I am, I started googling egg free cupcakes. Of course I am thinking the whole time; she is never going to eat these. I find all the allergy free recipes you can possibly imagine and of course I am missing something from every recipe and I really don’t want to go grocery shopping. Well, I come across the diet soda and cake mix recipe. HA! This will work. I happen to have a couple of boxes of cake mixes left over from Christmas time and my son-in-law drinks soda. Now, he doesn't exactly drink diet soda, he is a Mountain Dew junkie. But hey, this is a one time deal for the declaration of the love of cupcakes. So yes, we are now prepared to make our very first batch of caffeine hyped up, egg free cupcakes.

Natty Bug poured, mixed, dumped, and decorated to her hearts desire. She licked batter off the spatula and icing off the butter knife.

But no, she still has not eaten her cupcake…..

I will tell you they were very tasty!

Here is our version of the recipe.

1 Box Betty Crocker White Cake Mix
1 Can Mountain Dew

Mix together by hand with a whisk. Fill cupcake liners 2/3’s full. Bake according to package instructions.


We decorated with Betty Crocker lemon icing and pink sprinkles. I almost forgot, we also used Halloween cupcake liners! Trust me; it was all about what was already in the pantry.


My very first post!!

Well hello everyone!! 

My blog will be a complete growing experience! That I can guarantee! So let me introduce myself a bit, I am a 44 yo mother of a 27yo son and a 26yo daughter. I have a fabulous 3yo grand-daughter and one on the way. Our family deals with many food allergies. AND I love to cook, so you can imagine the problems/issues this can pose. I am a secretary for an elementary school that is a county wide Intensive Learning Center.


My vision for this blog is a little of this and a lot of that. I have many interests and I swear I am self diagnosed ADHD. So, my attention span is everywhere. I just want to share with you what I like and think you may find useful in your life. This will range from recipes, crafts, DIY, and decorating ideas. Your guess is as good as mine as to what I might be interested in on any given day. I hope you enjoy and are inspired. Remember this is all in fun and I am not an expert in anything!
